Hey guys, today I'm pretty excited because we're making fluffy pumpkin pancakes. This is based on our oatmeal pancake recipe. Here we go. We'll take one cup of almond milk. One quarter cup of aquafaba. That's the water that comes in cans of chickpeas. Water of beans aqua faba. Three quarters cup of pumpkin puree. One and a half cups of oats. One quarter teaspoon of baking soda.
Get you that fluffy. One quarter teaspoon of cinnamon. One quarter teaspoon of pumpkin spice. And one or two dates. Not pictured. We forgot to put them in. Well put the top on blend on variable speed 10 for about 20 seconds till everything is combined and smooth. And then we'll do the pancake thing. Big pan over medium heat. For this first batch we're making them with walnuts. Now if you added a date or two you probably don't need syrup. They're sweet on their own, especially if you're giving them to kids. But if you're making them as a treat throw some syrup on. Okay, next batch we're adding some chocolate chips. Super duper sweet here. Stack them up real high. Douse them awesome and syrup. Hey at least there are 100% plant based, right? These are really really good. And guys you don't need to eat them all you can throw them in the freezer warm them up either in the microwave or on the stove.
We sometimes throw money in the toaster for our little guy. You can also make these as baked pancakes, just like you would on a pan,. but throw them on a cookie sheet and in the oven. 350 degrees, 10 minutes. Then you don't have to to sit over the stove.
