favourite – salmon bacon skewers They are deliciously juicy and
baked only in just 20 minutes You will need fresh salmon fillets,
few pieces of smocked bacon, lemon, garlic, olive oil and wooden skewers. Cut salmon fillets into small cubes
of a similar size, there is no need for precision. Put them a side.
Do the same with the bacon stripes. Assemble skewers mixing bacon pieces with salmon cubes as you want salmon to absorb
juices and flavours from the bacon For marinade – Cut 1/3d out of your
fresh lemon. And squeeze juices out of it into the small dish containing olive oil. Clean up few cloves of fresh
garlic – 2 or 3 will be enough. Cut garlic into small pieces or crush cloves in
to the dish with olive oil and lemon juice mixture Get some backing tray, better to use
grid for even heating from all sides.
Place salmon skewers on the grid
leaving some space between them Brush marinade on the top of skewers generously
covering each with oil and garlic pieces. Bake skewers in oven for 10 minutes
on top shelf at the 170C (340F). Get them from the oven and
rotate each skewer up side down. Bake for another 10 minutes. You can serve them either hot or cold Enjoy!.
