hello all and welcome to grassroot food
lab this is Tarta de Santiago a traditional spanish almond
cake which is gluten free and lactose free it's named so because it was created in
Santiago de Compostela which is a pilgrimage spot in Galicia,
Spain and one of the unesco world heritage
sites as well anyway we can make this at home because
it's nutritious delicious and very easy to prepare today i'll
share with you the original recipe of this delicacy
however, in the next part of this video i'll share
a vegetarian version of this cake so for the original part of this let's
get started for this cake i have taken 2 cups of
blanched almonds ground and lightly roasted 3 large eggs separated
3 4 cup of sugar brown or regular 1 lemon and 1 orange zest
i have cleaned these properly with warm water two teaspoons of powdered cinnamon
some icing sugar first we will prepare the cake tin by
smearing some butter and dusting with flour we don't need to beat the egg yolks much so add sugar and other dry ingredients
and give it a mix beat the egg whites to get soft peaks originally separating eggs is not needed
but i do this to make the cake extra light adding orange juice is completely
optional i feel it enhances the flavor
