Today we will be making banana blueberry pancakes.
There’s no flour or dairy in these and the flavor and the texture will surprise you they’re soft light and complimented by the sweetness of bananas and blueberries and the ingredients for these are super simple so this recipe will make you six little pancakes.

So if you need more, just double triple quadruple this recipe as needed.
- Mix our 2 eggs until combined we will mix in
- 1 tablespoon of coconut into the eggs and mix until combined two whenever I make pancakes or crepes
- I always add a little bit of olive oil or melted butter to the batter the oil will prevent the pancakes from sticking to the pan and you can use a lot less oil
- When you’re frying a small pinch of salt which is another baker’s trick because salt enhances all the other flavors and actually makes the pancakes taste sweeter without adding any sugar cut your banana into small pieces
- Add a handful of blueberries which is about 1/3 cup and you can use fresh or frozen blueberries
- Preheat the and I added a little bit of cooking oil
- I like to keep these pancakes small because it is much easier to flip them
- Cook the pancakes covered for the first two minutes this way the egg will set faster
- After two minutes check if the bottom of the pancake is golden and if there is just flip them
- Cook for another two minutes thank you for watching enjoy
